- Prepare spaghetti squash by cooking it—bake in a 400°F oven for about 40 minutes or microwave for 10-15 minutes. Cool, then shred the flesh.
- In a nonstick skillet, cook ground turkey over medium heat for about 7 minutes until browned and no longer pink.
- In a large mixing bowl, combine cooked turkey, shredded spaghetti squash, black beans, corn, and most of the cheese. Mix well.
- Transfer mixture to a greased 9x13-inch baking dish. Spread evenly and top with reserved cheese.
- Cover and bake in a preheated 350°F oven for 45 minutes. Remove foil and bake for an additional 15 minutes until golden.
- Let casserole rest for at least 10 minutes before serving.
