  • 1 pound 90% Lean Ground Beef or ground turkey/chicken
  • 2 cloves Garlic minced; fresh recommended
  • 1 tablespoon Taco Seasoning or a homemade mix
  • 2 tablespoons Tomato Paste no substitute recommended
  • 1 tablespoon Cornstarch or arrowroot powder for gluten-free
  • 1 cup Half and Half or heavy cream/coconut milk
  • 1 cup Tomato Sauce check for added sugars if sugar-free is desired
  • to taste Salt can be omitted for low-sodium
  • pinch Red Pepper Flakes optional for heat
For the Topping
  • 2 cups Mexican Blend Shredded Cheese or a blend of cheddar and Monterey Jack
  • 32 ounces Frozen Tater Tots can use homemade potato bites
For the Garnish
  • 1 cup Sour Cream or Greek yogurt for a healthy substitute
  • 1 cup Wild Cherry Tomatoes or any small tomato type
  • 2 tablespoons Green Onions or chives for a similar flavor

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C).
  2. In a large skillet over medium heat, melt 2 tablespoons of butter. Add diced onion and sauté for about 3 minutes until the onion becomes translucent.
  3. Increase heat to medium-high and add 1 pound of ground beef. Stir in 2 minced garlic cloves and 1 tablespoon of taco seasoning, browning for 5-7 minutes until no pink remains.
  4. Lower heat to medium and stir in 2 tablespoons of tomato paste and 1 tablespoon of cornstarch. Pour in 1 cup of half and half and 1 cup of tomato sauce, mix well and cook until thickened for about 5-10 minutes.
  5. Mix in 1 cup of shredded cheese until melted. Pour beef mixture into a greased 9x13-inch baking dish and arrange frozen tater tots on top.
  6. Bake for 25-30 minutes until tater tots are golden brown and cheese is bubbly.
  7. Remove from oven, garnish with sour cream, cherry tomatoes, and green onions. Serve hot.
