  1. In a large mixing bowl, combine 1 cup of mascarpone cheese and 1 cup of heavy cream. Beat on medium speed for 2-3 minutes until smooth and fluffy.
  2. Add 1/4 cup of amaretto liqueur, 1/4 cup of cherry juice, and 1 teaspoon of vanilla extract. Mix on low speed for 1-2 minutes until fully incorporated.
  3. In a separate bowl, blend together 1/3 cup of granulated sugar and 1/4 cup of cherry preserves until smooth. Fold this mixture into the mascarpone cream.
  4. Gently fold in 1 cup of chopped fresh cherries into the mascarpone mixture.
  5. In a shallow dish, combine 1/2 cup of amaretto liqueur and 1/2 cup of cherry juice. Dip each ladyfinger into the mixture for 1-2 seconds.
  6. Arrange a layer of dipped ladyfingers at the bottom of a 9x9-inch baking dish.
  7. Spread half of the mascarpone mixture over the layer of ladyfingers.
  8. Add another layer of dipped ladyfingers on top of the mascarpone mixture.
  9. Pour the remaining mascarpone mixture over the second layer of ladyfingers and spread it evenly.
  10. Cover the baking dish tightly and refrigerate for at least 4 hours, preferably overnight.
  11. Dust the top with cocoa powder and sprinkle shaved dark chocolate before serving.
