Dough Preparation
- In a large mixing bowl, beat together the butter, confectioners' sugar, and vanilla bean paste until light and fluffy.
- Gently fold in the all-purpose flour and rice flour until a soft dough forms.
- Divide the dough into two portions, shape into discs, wrap in plastic and refrigerate for 25 minutes.
Baking
- Preheat the oven to 160°C (320°F) and prepare baking trays with parchment paper.
- Roll out one disc of dough and cut out biscuit shapes, then create cut-outs in half of them.
- Bake the biscuits for about 15 minutes, until firm and lightly golden.
- Cool on a wire rack and then assemble by adding jam between two biscuits.
