Ingredients
  

Biscuit Dough
  • 1 cup unsalted butter softened
  • 1 cup confectioners' sugar
  • 1 teaspoon vanilla bean paste can substitute with vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup rice flour (or corn starch) optional for texture
Jam Filling
  • 1/2 teaspoon jam (strawberry or apricot) adjust flavor as desired

Method
 

Dough Preparation
  1. In a large mixing bowl, beat together the butter, confectioners' sugar, and vanilla bean paste until light and fluffy.
  2. Gently fold in the all-purpose flour and rice flour until a soft dough forms.
  3. Divide the dough into two portions, shape into discs, wrap in plastic and refrigerate for 25 minutes.
Baking
  1. Preheat the oven to 160°C (320°F) and prepare baking trays with parchment paper.
  2. Roll out one disc of dough and cut out biscuit shapes, then create cut-outs in half of them.
  3. Bake the biscuits for about 15 minutes, until firm and lightly golden.
  4. Cool on a wire rack and then assemble by adding jam between two biscuits.
