- Preheat your oven to 350°F (175°C). While the oven heats, gather and rinse the sweet potatoes.
- Using a fork, prick each sweet potato several times and lightly coat with canola oil, sprinkling with salt. Bake for about 60 to 90 minutes.
- Once baked, cool for a few minutes, slice each potato in half lengthwise, and scoop out the insides into a mixing bowl.
- Add crumbled bacon, unsalted butter, and shredded cheddar cheese to the bowl and mix until well combined.
- Spoon the filling back into the potato skins, mounding slightly higher than the edges.
- Crack a large egg into the well of each filled potato, adding salt and pepper over the eggs.
- Return the filled sweet potatoes to the oven and bake for an additional 15 to 20 minutes.
- Remove from the oven, let cool, and garnish with minced scallion before serving.
