Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). While the oven heats, gather and rinse the sweet potatoes.
  2. Using a fork, prick each sweet potato several times and lightly coat with canola oil, sprinkling with salt. Bake for about 60 to 90 minutes.
  3. Once baked, cool for a few minutes, slice each potato in half lengthwise, and scoop out the insides into a mixing bowl.
  4. Add crumbled bacon, unsalted butter, and shredded cheddar cheese to the bowl and mix until well combined.
  5. Spoon the filling back into the potato skins, mounding slightly higher than the edges.
  6. Crack a large egg into the well of each filled potato, adding salt and pepper over the eggs.
  7. Return the filled sweet potatoes to the oven and bake for an additional 15 to 20 minutes.
  8. Remove from the oven, let cool, and garnish with minced scallion before serving.
