  • 1 large Egg use nut milk and flaxseed for vegan
  • 1 cup Panko Bread Crumbs gluten-free if needed
  • ½ cup Almond Flour or all-purpose flour if preferred
  • ½ cup Parmesan Cheese substitute with pecorino or vegan cheese if necessary
  • to taste Pepper fresh cracked black pepper is recommended
For Air Frying
  • 2 tablespoons Olive Oil for drizzling

  • 2 cups Cooked Pasta for serving
  • 1 cup Tomato Sauce for serving
  • ½ cup Cashew Cream for drizzling

Step-by-Step Instructions
  1. Preheat the air fryer to 370°F (188°C) for 5 minutes.
  2. Slice the eggplant and sprinkle with sea salt, let drain in a colander for 30 minutes.
  3. Whisk one egg in a bowl; mix panko, almond flour, Parmesan, salt, and pepper in another bowl.
  4. Pat eggplant slices dry, dip in egg, then coat with panko mixture.
  5. Drizzle olive oil over coated eggplant slices and arrange in a single layer in the air fryer basket.
  6. Air fry at 370°F (188°C) for 17-20 minutes, flipping halfway through.
  7. Serve immediately with pasta and sauce or as desired, garnished with herbs.
