- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the shredded zucchini with salt and let it sit for about 10 minutes.
- Squeeze out excess moisture from the zucchini using a kitchen towel.
- Mix the zucchini with eggs, Parmesan cheese, and half of the mozzarella.
- Grease a 9x13-inch baking dish and press the zucchini mixture evenly into the bottom.
- Bake the crust for about 20 minutes until lightly browned.
- Cook ground beef and chopped onion in a skillet until browned.
- Stir in pizza sauce, bell pepper, mushrooms, oregano, and garlic powder. Cook for 5 minutes.
- Spread the beef mixture over the crust after it's baked.
- Top with remaining mozzarella and all cheddar cheese.
- Bake for an additional 20 minutes until cheese is melted and golden.
- Let cool for a few minutes before slicing and serving.
