  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
  • 2 tablespoons Olive Oil
  • 2 tablespoons Butter melted
  • 2 cups Sharp Cheddar Cheese shredded
  • 1 cup Parmesan Cheese optional, grated

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Slice fresh zucchini into half-inch rounds, dice your ripe tomatoes, and chop the onion into small pieces.
  3. In a large mixing bowl, combine sliced zucchini, diced tomatoes, chopped onion, and crispy bacon pieces. Sprinkle in garlic powder, oregano, salt, and pepper, and toss well.
  4. Drizzle olive oil and melted butter over the vegetable mixture and mix thoroughly. Transfer the mixture into a greased baking dish.
  5. Layer sharp cheddar cheese and, if desired, Parmesan cheese on top of the zucchini mixture.
  6. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
