Preparation Steps
- Preheat your oven to 375°F (190°C).
- Slice fresh zucchini into half-inch rounds, dice your ripe tomatoes, and chop the onion into small pieces.
- In a large mixing bowl, combine sliced zucchini, diced tomatoes, chopped onion, and crispy bacon pieces. Sprinkle in garlic powder, oregano, salt, and pepper, and toss well.
- Drizzle olive oil and melted butter over the vegetable mixture and mix thoroughly. Transfer the mixture into a greased baking dish.
- Layer sharp cheddar cheese and, if desired, Parmesan cheese on top of the zucchini mixture.
