- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
- In a mixing bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and ½ teaspoon of salt until well combined.
- Using a stand mixer, cream together ½ cup of unsalted butter and 1 cup of granulated sugar on medium speed until fluffy and light in color.
- Add 2 large eggs one at a time, mixing well after each. Then, stir in 2 tablespoons of fresh lime juice and optional neon green food coloring.
- Gradually mix the dry ingredients into the wet mixture on low speed until a thick dough forms.
- Using a cookie scoop, portion out the dough and roll each piece into a ball. Roll them in granulated sugar, then in powdered sugar.
- Place the coated dough balls on the prepared baking sheets, leaving space between each cookie. Bake for 9-11 minutes.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack.
