- Juice the fresh limes to obtain about 1 cup of lime juice, usually from around 6 limes, and pour it into a large pitcher.
- Measure out ½ cup of honey and add it to the pitcher with the lime juice. Stir until fully dissolved.
- Pour in 5 cups of cold water, stirring gently to combine. Taste and adjust sweetness with more honey if necessary.
- Grate a 1-2 inch piece of fresh ginger into the limeade mixture and stir well to evenly distribute the ginger flavor.
- Optionally strain the limeade through a fine sieve to remove ginger pulp for a smoother drink.
- Chill the limeade in the refrigerator for about 30 minutes, or serve immediately over ice. Garnish with lime slices or mint.
