  • 500 grams Chicken Thigh Fillets Skinless and boneless
  • 2 stalks Lemongrass Use only the white part
  • 4 cloves Garlic Finely minced
  • 2 tablespoons Lime Juice Freshly squeezed
  • 2 tablespoons Fish Sauce Substitute with extra soy sauce if avoiding fish
  • 2 tablespoons Soy Sauce Light or all-purpose
  • 1 tablespoon Brown Sugar
  • 2 tablespoons Vegetable Oil Neutral oil for cooking
For the Noodles and Toppings
  • 200 grams Vermicelli Noodles Soak in hot water
  • 1 Fresh Vegetables (Carrots, Cucumbers, Lettuce, Bean Sprouts) Adjust to suit your palate
  • 1/4 cup Mint Fresh herbs
  • 1/4 cup Cilantro Fresh herbs
For the Nuoc Cham Sauce
  • 2 tablespoons Fish Sauce
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Sugar
  • 1 tablespoon Lime Juice
  • 2 cloves Garlic Minced
  • 1 Chili Finely chopped, adjust for spice level

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine chicken thigh fillets with lemongrass, garlic, lime juice, fish sauce, soy sauce, brown sugar, and vegetable oil. Stir well and let marinate for at least 1 hour.
  2. Heat a skillet or grill over medium-high heat. Add vegetable oil, then the marinated chicken, cooking for 6-8 minutes until golden brown and cooked through. Remove and rest before slicing.
  3. For the Nuoc Cham sauce, whisk together fish sauce, rice vinegar, sugar, lime juice, minced garlic, and chili in a small bowl. Let sit for at least 20 minutes.
  4. Soak the vermicelli noodles in a large bowl of hot water for 3-5 minutes until soft. Drain and rinse under cold water.
  5. To serve, place noodles in bowls, top with sliced chicken and fresh vegetables, and drizzle with Nuoc Cham sauce.
