Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash the beets thoroughly under running water, trim tops and wrap each beet in aluminum foil.
  3. Place the wrapped beets on a baking sheet and roast for 30 to 40 minutes until tender.
  4. Cool the beets for 10 minutes, peel off skins, and slice into wedges.
  5. In a mixing bowl, combine olive oil, balsamic vinegar, salt, and pepper; whisk to blend.
  6. In a large salad bowl, toss together mixed greens, sliced beets, and crumbled goat cheese.
  7. Drizzle dressing over the salad, gently toss to coat ingredients.
  8. Sprinkle chopped pistachios and fresh herbs on top before serving.
