  • 14 oz firm tofu silken tofu may not hold its shape
For Garnishing
  • vegan feta cheese optional; can be replaced with nutritional yeast
  • chopped cilantro optional; parsley can serve as an alternative

Step-by-Step Instructions for Vegan Shakshuka
  1. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add diced red onion and sauté for about 10 minutes until softened and golden brown.
  2. Add diced red and yellow bell peppers. Cook for 3-5 minutes until the peppers are slightly tender.
  3. Stir in minced garlic, salt, smoked paprika, and cumin. Cook for 30-60 seconds until the garlic is fragrant.
  4. Add diced tomatoes and maple syrup. Stir and let it simmer for 5-7 minutes.
  5. Prepare the tofu by pressing and cutting it into cubes. Nestle the tofu cubes into the sauce and simmer for another 10-15 minutes.
  6. Remove from heat and garnish with vegan feta cheese and chopped cilantro if desired. Serve hot with crusty bread.
