Tzatziki Sauce
  • 1 cup Greek Yogurt substitute with regular yogurt or sour cream if preferred
  • 1 medium Cucumber finely diced, use English cucumber to prevent excess water
  • 2 tablespoons Olive Oil or avocado oil as an alternative
  • 2 tablespoons Lemon Juice or apple cider vinegar as a substitute
  • 1 clove Garlic minced, garlic powder can be a substitute or omit for milder taste
  • 1 teaspoon Dried Dill use fresh dill for a vibrant flavor
  • Salt to taste
  • Pepper to taste
Salad
  • 2 pieces Grilled Chicken Breasts use leftover or rotisserie chicken for quick prep
  • 1 cup Cherry Tomatoes halved, grape tomatoes can be a substitute or skip for low-carb
  • 1 medium Bell Pepper chopped, choose any color you prefer
  • 1/4 cup Red Onion sliced, green onions can be used for a milder taste
  • 1/4 cup Fresh Parsley for garnish

Method
 

Preparation
  1. In a medium bowl, combine Greek yogurt, diced cucumber, olive oil, lemon juice, and minced garlic. Stir in dried dill along with salt and pepper to taste. Mix until smooth and creamy. Set aside.
  2. Preheat the grill to medium-high heat. Season chicken breasts with salt and pepper. Cook on the grill for 7-10 minutes on each side until the internal temperature reaches 165°F. Let the chicken rest before slicing.
  3. In a large mixing bowl, add sliced grilled chicken, halved cherry tomatoes, chopped bell pepper, and sliced red onion. Toss gently to combine.
  4. Pour the tzatziki sauce over the salad mixture. Toss everything together until evenly coated.
  5. For enhanced flavor, cover and refrigerate for about 10 minutes before serving.
  6. Garnish with freshly chopped parsley and serve as a light meal or alongside pita bread.
