Ingredients
  

For the Herbed Yogurt
  • 1 cup Whole milk Greek yogurt Can substitute with regular yogurt.
  • 1 tbsp Extra virgin olive oil
  • 0.5 Fresh lemon juice About half a small lemon.
  • 1 clove Garlic Grated or minced.
  • 1 tbsp Fresh dill Can substitute with chives or parsley.
  • 1 tbsp Fresh mint Optional.
  • 1 tsp Kosher salt
For the Poached Eggs
  • 4 Large eggs 2 per serving.
  • 1 tbsp Distilled white vinegar Helps achieve perfectly poached eggs.
For Serving
  • 2 Pita or crusty bread Essential for enjoying the dish.
  • to taste Flaky sea salt For finishing touch.
  • to taste Freshly ground black pepper For seasoning.
For the Spiced Butter Sauce
  • 2 tbsp Unsalted butter
  • 1 tsp Aleppo pepper Can substitute with red pepper flakes.

Method
 

Preparation
  1. In a large bowl, combine Greek yogurt, olive oil, lemon juice, garlic, and dill. Mix until smooth and creamy.
  2. Fill a saucepan with 3 inches of water, add vinegar, and heat until simmering. Crack eggs into ramekins and gently slide them into the water. Poach for about 3 minutes.
  3. In a skillet, melt butter over medium heat. Stir in Aleppo pepper and cook until fragrant.
  4. Spread herbed yogurt in bowls, place poached eggs on top, and drizzle with spiced butter sauce.
  5. Serve immediately with pita or crusty bread.
