Preparation
- In a large bowl, combine Greek yogurt, olive oil, lemon juice, garlic, and dill. Mix until smooth and creamy.
- Fill a saucepan with 3 inches of water, add vinegar, and heat until simmering. Crack eggs into ramekins and gently slide them into the water. Poach for about 3 minutes.
- In a skillet, melt butter over medium heat. Stir in Aleppo pepper and cook until fragrant.
- Spread herbed yogurt in bowls, place poached eggs on top, and drizzle with spiced butter sauce.
- Serve immediately with pita or crusty bread.
