Ingredients
  

For the Chili Filling
  • 1 tablespoon Olive Oil or avocado oil
  • 1 medium White Onion diced
  • 2 cloves Garlic minced
  • 1 pound Ground Turkey or lean ground beef/chicken
  • 2 tablespoons Tomato Paste or crushed tomatoes
  • 1 teaspoon Salt to taste
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Sugar omit for sugar-free
  • 1 tablespoon Chili Powder adjust to taste
  • 1 cup Water
  • 1 can Chili Beans in Mild Sauce
  • 1 can Canned Diced Green Chiles
  • 1 can Canned Diced Tomatoes
For the Assembly
  • 1 cup Shredded Cheddar Cheese (Reduced Fat or Fat-Free) or vegan cheese
  • 1/4 cup Chopped Parsley or cilantro
  • 4 pieces French Rolls or Bolillos sturdy

Method
 

Preparation
  1. Heat the olive oil in a skillet over medium heat and sauté the diced onion until soft. Add minced garlic and cook for another minute.
  2. Increase to medium-high, add ground turkey, and cook until browned and fully cooked.
  3. Stir in tomato paste, salt, cumin, sugar, chili powder, and water. Mix in chili beans, green chiles, and diced tomatoes. Let simmer for a few minutes until thickened.
  4. Hollow out the French rolls for the filling.
  5. Spoon the chili mixture into the rolls, top with cheese and parsley, and serve immediately.
