- Preheat your oven to 200°C (392°F).
- Finely chop the red onion and garlic and set aside.
- In a large skillet, heat olive oil over medium heat, add red onion and garlic, and sauté for 3-4 minutes.
- Stir in tomato paste, canned diced tomatoes, heavy cream, oregano, and basil. Simmer for 5 minutes.
- Combine cooked tortellini with the prepared sauce in a mixing bowl.
- Transfer the mixture into a greased baking dish and top with mozzarella cheese.
- Bake in the preheated oven for 20 minutes until golden brown.
- Remove from the oven and let cool slightly before serving.
