Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute until fragrant. Add shrimp and cook for 3-5 minutes until pink and opaque. Remove and set aside.
  2. In the same skillet, add more olive oil if needed, then toss in spinach and tomatoes. Cook for 2-3 minutes until spinach wilts and tomatoes soften.
  3. Return shrimp to the skillet and add cooked pasta, tossing everything together to coat in garlic and olive oil sauce.
  4. Season generously with salt and pepper, and sprinkle with grated Parmesan cheese if desired. Toss again.
  5. Plate the pasta hot and enjoy immediately.
