For the Sauce
  • 2 pieces Red Bell Peppers Essential for vibrant flavor.
  • 3 cloves Garlic Fresh garlic preferred.
  • 2 tablespoons Lemon Juice Freshly squeezed for best taste.
  • 2 tablespoons Olive Oil Extra virgin preferred.
Seasonings

  • to taste Pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Gather your ingredients.
  2. Slice the red bell peppers and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes.
  3. Transfer roasted peppers to a blender, add garlic and lemon juice, and blend until smooth.
  4. Heat olive oil in a skillet over medium heat. Add tilapia and cook for 3-4 minutes per side until golden.
  5. Pour roasted pepper sauce over the fish and simmer for 1 minute.
  6. Garnish with fresh parsley or basil and serve with couscous or rice.
