Preparation
- Preheat the oven to 400°F (200°C). Gather your ingredients.
- Slice the red bell peppers and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes.
- Transfer roasted peppers to a blender, add garlic and lemon juice, and blend until smooth.
- Heat olive oil in a skillet over medium heat. Add tilapia and cook for 3-4 minutes per side until golden.
- Pour roasted pepper sauce over the fish and simmer for 1 minute.
- Garnish with fresh parsley or basil and serve with couscous or rice.
