Ingredients
  

Filling
  • 2 cups shredded cabbage use a mix of red and green for color
  • 1 cup shredded carrots about 5 large carrots
  • 1 medium red bell pepper thinly sliced
  • 1 cup cooked edamame can be omitted
  • 1 handful fresh cilantro optional
  • ¼ cup chopped green onions
  • ½ cup honey-roasted peanuts substitute with other nuts if desired
  • ½ cup wonton strips can be omitted
  • 4 wraps Flatout sea salt and black pepper tortilla wraps can use any flatbread
Peanut Sauce
  • ¼ cup rice vinegar
  • ¼ cup soy sauce
  • 2 tablespoons fresh lime juice use fresh for best flavor
  • 2 tablespoons honey substitute with maple syrup for vegan option
  • 1 tablespoon minced garlic
  • ½ cup peanut butter consider a nut-free alternative
  • to taste salt and crushed red pepper flakes for seasoning

Method
 

Preparation Steps
  1. In a medium bowl, whisk together the rice vinegar, soy sauce, lime juice, honey, and minced garlic. Gradually add the peanut butter and blend until smooth and creamy.
  2. In a large mixing bowl, combine the shredded cabbage, shredded carrots, sliced red bell pepper, cooked edamame, cilantro, chopped green onions, honey-roasted peanuts, and wonton strips. Toss together until well mixed.
  3. Lay a tortilla wrap flat, place about 1 cup of the filling in the center, and drizzle 2 tablespoons of peanut sauce over it. Fold in the sides and roll tightly.
  4. Slice each wrap in half diagonally and arrange on a platter. Serve with remaining peanut sauce on the side.
