Cooking Steps
  1. Preheat your oven to 300°F and adjust the rack to the bottom third position.

  3. Roast the brisket uncovered for 1 hour until a brown crust forms.
  4. After 1 hour, carefully remove the pan and add enough beef stock to create about a ½ inch depth of liquid. Cover with aluminum foil and return to the oven for an additional 3.5 hours.
  5. Once done, let the brisket rest covered for about 15 minutes before slicing.
  6. Slice against the grain to serve warm with pan juices and optional BBQ sauce.
