- Gather all ingredients: peanut butter, soy sauce, honey or maple syrup, garlic, lemon juice, water, and rice noodles.
- Boil a pot of water and cook the rice noodles according to the package instructions for 5-7 minutes.
- In a blender or mixing bowl, combine peanut butter, soy sauce, honey or maple syrup, garlic, lemon juice, and water. Blend until smooth.
- In a large pan over medium heat, combine drained noodles and peanut sauce, tossing gently for 1-2 minutes until heated through.
- Serve immediately, garnished with crushed peanuts or spring onions.
