  • 1/2 cup Peanut Butter Choose creamy or crunchy
  • 1 tablespoon Soy Sauce Use light soy sauce
  • 1 tablespoon Honey or Maple Syrup Use maple syrup for vegan option
  • 2 cloves Garlic Fresh
  • 1/2 tablespoon Lemon Juice
  • 5 tablespoons Water Adjust for consistency
Noodle Ingredients
  • 6 oz Rice Noodles Can substitute with spaghetti

Method
 

Cooking Instructions
  1. Gather all ingredients: peanut butter, soy sauce, honey or maple syrup, garlic, lemon juice, water, and rice noodles.
  2. Boil a pot of water and cook the rice noodles according to the package instructions for 5-7 minutes.
  3. In a blender or mixing bowl, combine peanut butter, soy sauce, honey or maple syrup, garlic, lemon juice, and water. Blend until smooth.
  4. In a large pan over medium heat, combine drained noodles and peanut sauce, tossing gently for 1-2 minutes until heated through.
  5. Serve immediately, garnished with crushed peanuts or spring onions.
