  • 1 medium Avocado Optional for creaminess.
  • 8 ounces Imitation Crab Optional plant-based protein.
  • 4 ounces Smoked Trout Optional for smoky flavor.
  • 8 ounces Shrimp or Cubed Tuna Optional to add protein.
For the Dressing
  • 4 ounces Cream Cheese Or coconut cream cheese for vegan.
  • 2 tablespoons Mayonnaise Greek yogurt can be used.
  • 1 tablespoon Soy Sauce Use tamari for gluten-free.
  • 1 tablespoon Rice Vinegar Lime juice can substitute.
  • 1 teaspoon Sesame Oil Alternatively, use olive oil.

Method
 

Prepare the Cucumbers
  1. Wash the cucumbers, slice thinly, sprinkle with salt, and let sit for 10 minutes in a colander.
  2. Rinse cucumbers with cold water and pat dry.
Make the Dressing
  1. Soften cream cheese in the microwave for 15 seconds.
  2. Combine with mayonnaise, soy sauce, rice vinegar, and sesame oil and mix until smooth.
Mix the Salad
  1. In a bowl, combine cucumbers and sweet onion, add dressing, and toss gently.
  2. Let sit for 5 minutes to allow flavors to meld.
Add Final Touches
  1. Adjust seasoning and add any optional ingredients, folding them gently.
