Method
 

Step-by-Step Instructions
  1. Preheat your oven to 500°F (260°C) and coat a baking dish with cooking spray.
  2. In a mixing bowl, combine ground chicken, panko breadcrumbs, crushed pineapple, milk, soy sauce, green onions, garlic, ginger, and black pepper. Mix well.
  3. Form the mixture into golf ball-sized meatballs and place them in the baking dish.
  4. Bake for about 15 minutes, or until golden brown and cooked through.
  5. Prepare the teriyaki sauce by heating soy sauce, brown sugar, water, and pineapple juice in a skillet.
  6. Thicken the sauce with a cornstarch slurry, cooking until glossy.
  7. Toss baked meatballs in the teriyaki sauce until well coated.
  8. Serve meatballs over rice or quinoa, garnished with chopped green onions.
