  • 1 teaspoon Paprika use sweet or smoked
  • 1/4 teaspoon Cayenne Pepper adjust to taste or omit
  • 1 cup Feta Cheese sheep's feta preferred, goat cheese is an option
  • 1/2 cup Parmesan Cheese or nutritional yeast for dairy-free
  • 1/2 cup Roasted Red Peppers can substitute with sun-dried tomatoes

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Gently slice each salmon fillet lengthwise, creating a pocket for the filling.
  3. Drizzle 1 tablespoon of olive oil over the fillets and sprinkle with salt and pepper.
  4. In a skillet, heat the remaining olive oil and sauté the spinach with Italian seasoning, paprika, salt, and pepper until wilted, about 2 minutes.
  5. Turn off the heat and mix in roasted red peppers, feta, and parmesan until well combined.
  6. Stuff the spinach-feta mixture into the salmon pockets and press down gently.
  7. Place the stuffed salmon on the baking sheet and bake for 12-17 minutes until cooked through.
  8. Remove from the oven and let the salmon rest for a minute before serving.
