- Prepare Strawberry Puree: Blend 1½ cups of fresh strawberries with honey and lemon juice until smooth. Chop the remaining strawberries into small pieces for added texture.
- Mix Yogurt Layers: Combine 1 cup of vanilla Greek yogurt, a tablespoon of honey, and vanilla extract until smooth. Mix plain Greek yogurt with the strawberry puree and diced strawberries.
- Combine Granola Base: Mix granola, melted coconut oil, and honey. Ensure that every granola piece is well-coated and fold in white chocolate chips if desired.
- Assemble Bars: Firmly press the granola mixture into the bottom of each popsicle mold, fill with the vanilla yogurt mixture, and then layer the strawberry yogurt mix on top.
- Freeze and Set: Place the molds in the freezer for at least 4 hours or until they are completely firm.
