Step-by-Step Instructions for Strawberry Yogurt Bars
  1. Prepare Strawberry Puree: Blend 1½ cups of fresh strawberries with honey and lemon juice until smooth. Chop the remaining strawberries into small pieces for added texture.
  2. Mix Yogurt Layers: Combine 1 cup of vanilla Greek yogurt, a tablespoon of honey, and vanilla extract until smooth. Mix plain Greek yogurt with the strawberry puree and diced strawberries.
  3. Combine Granola Base: Mix granola, melted coconut oil, and honey. Ensure that every granola piece is well-coated and fold in white chocolate chips if desired.
  4. Assemble Bars: Firmly press the granola mixture into the bottom of each popsicle mold, fill with the vanilla yogurt mixture, and then layer the strawberry yogurt mix on top.
  5. Freeze and Set: Place the molds in the freezer for at least 4 hours or until they are completely firm.
  6. Unmold and Serve: Remove the molds and run warm water over the outside for easier unmolding. Serve immediately.
