- Thaw the puff pastry at room temperature, about 30-60 minutes or overnight in the fridge.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Beat cream cheese, sugar, and vanilla extract until smooth; add food coloring and fold in half of the strawberries.
- Roll out puff pastry to 1/8 inch thick and cut heart shapes with a cookie cutter.
- Fill each heart with 1-2 tablespoons of cream cheese mixture and top with remaining strawberries.
- Whisk egg and water for egg wash; brush edges of pastry.
- Bake for 12-15 minutes until golden-brown, rotating halfway through.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
