Cooking Steps
  1. Preheat your oven to 425°F (220°C) for perfect caramelization of the chicken's skin.
  2. Lightly oil a 9x13 inch baking dish to prevent the chicken from sticking.
  3. In a medium bowl, combine soy sauce, Dijon mustard, apricot preserves, dehydrated onion, kosher salt, granulated garlic, and crushed red pepper. Whisk until blended.
  4. Coat each chicken thigh generously with the sauce, reserving about one-third for glazing later.
  5. Place chicken thighs skin-side down in the prepared baking dish and bake for 20 minutes.
  6. After 20 minutes, flip chicken to skin-side up, spoon reserved sauce over each thigh, and bake for another 25-30 minutes.
  7. For extra crispiness, broil on high for 3-5 minutes, monitoring closely.
  8. Remove from oven and let rest for 5-10 minutes before serving.
