For the Speckle Effect
  • 2 tablespoons Cocoa Powder Natural or Dutch cocoa is fine.

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. Whisk together the cake flour, baking powder, baking soda, and salt in a mixing bowl. Set aside.
  3. Cream the warmed browned butter and granulated sugar until smooth and fluffy, about 3-4 minutes.
  4. Add the room-temperature egg whites and mix until light and airy, then mix in vanilla extract.
  5. Incorporate the sour cream, then alternately add dry ingredients and milk to the mixture, starting and ending with dry ingredients.
  6. Pour the batter into the prepared pan, smooth the top, and bake for approximately 35 minutes.
  7. While the cake cools, beat the unsalted butter for frosting, gradually adding confectioners' sugar until smooth. Infuse with vanilla and a splash of milk.
  8. Add sky blue gel food coloring to the frosting and adjust until the desired color is achieved.
  9. Spread the frosting evenly over the cooled cake.
  10. Whisk cocoa powder with vanilla extract, then flick onto the frosting to create the speckled effect.
  11. Slice the cake into squares and serve to guests.
