Step-by-Step Instructions
  1. Fill a large pot with salted water and bring it to a rolling boil. Add the pasta and cook for 8-10 minutes until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic for 1-2 minutes until fragrant.
  3. Add fresh spinach to the skillet and stir for 2-3 minutes until wilted.
  4. Add the drained pasta, crumbled feta, and the zest and juice of one lemon. Toss together for about 1 minute.
  5. Gradually add reserved pasta water, stirring continuously, to emulsify the sauce.
  6. Remove from heat and season with salt to taste. Serve immediately, garnished as desired.
