Step‑by‑Step Instructions for Spicy Miso Carrot Soup
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add 1 chopped onion and sauté for 5–7 minutes until translucent.
  3. Stir in 2 minced garlic cloves and 1 tablespoon of grated ginger, cooking for 1 minute.
  4. Add 4 cups of chopped carrots and cook for another 5 minutes.
  5. Pour in 4 cups of vegetable broth and simmer for 15–20 minutes.
  6. Blend the soup until smooth and creamy.
  7. Dissolve 3 tablespoons of miso paste in some hot soup and stir back into the pot.
  8. Pour in 1 cup of coconut milk and 2 tablespoons of soy sauce, mixing well.
