- Preheat oven to 400°F (204°C). Toss sweet potatoes with olive oil, cinnamon, and nutmeg. Spread on baking sheet and roast for 50-60 minutes until tender.
- Lower oven temperature to 375°F (190°C). Combine roasted sweet potatoes with almond milk, vanilla, brown sugar, maple syrup, cinnamon, nutmeg, allspice, raisins, and half of the marshmallows in a bowl.
- Grease a 9x13-inch baking dish. Pour sweet potato mixture into the dish and top with pieces of butter and remaining marshmallows.
- Mix pecans with maple syrup and spread over casserole. Cover with foil and bake for 15 minutes.
- Remove foil and bake for another 15 minutes until pecans are golden and marshmallows are melted. Allow to cool before serving.
