  • 4 cups Sweet Potatoes cubed
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Ground Cinnamon or nutmeg
  • 0.5 teaspoon Ground Nutmeg
  • 1 cup Almond Milk or any plant-based milk
  • 1 teaspoon Vanilla Extract pure
  • 2 tablespoons Unsalted Butter or plant-based butter
  • 0.5 cup Brown Sugar
  • 0.5 cup Pure Maple Syrup or agave syrup
  • 0.25 teaspoon Ground Allspice optional
  • 1 cup Raisins soaked
  • 1 cup Mini Marshmallows or vegan marshmallows
For the Topping
  • 1 cup Raw Pecans or walnuts

Method
 

Step-by-Step Instructions
  1. Preheat oven to 400°F (204°C). Toss sweet potatoes with olive oil, cinnamon, and nutmeg. Spread on baking sheet and roast for 50-60 minutes until tender.
  2. Lower oven temperature to 375°F (190°C). Combine roasted sweet potatoes with almond milk, vanilla, brown sugar, maple syrup, cinnamon, nutmeg, allspice, raisins, and half of the marshmallows in a bowl.
  3. Grease a 9x13-inch baking dish. Pour sweet potato mixture into the dish and top with pieces of butter and remaining marshmallows.
  4. Mix pecans with maple syrup and spread over casserole. Cover with foil and bake for 15 minutes.
  5. Remove foil and bake for another 15 minutes until pecans are golden and marshmallows are melted. Allow to cool before serving.
