Preparation Steps
- In a mixing bowl, combine warm whole milk, granulated sugar, and active dry yeast. Let sit until frothy.
- Mix bread flour and fine sea salt in a stand mixer. Combine on low speed.
- Slowly pour in the bloomed yeast mixture and beaten eggs. Mix until a shaggy dough forms.
- Add cold, cubed butter and knead the dough for 8-10 minutes until smooth and elastic.
- Grease a bowl, transfer the dough, cover, and let rise in a warm area for 1 hour or until doubled.
- Punch down the dough, divide into 6 pieces, and shape them into rectangles and then loaves.
- Place on a baking sheet, cover, and let proof for another 30 minutes.
- Preheat the oven to 400°F (200°C) and prepare egg wash. Brush it onto the rolls before baking.
- Bake for 15-20 minutes until golden brown and internal temperature is 195-200°F.
- Cool on a wire rack completely before slicing.
