Step-by-Step Instructions

  3. Place the chicken thighs into a resealable bag or bowl and pour half of the marinade over them, ensuring each thigh is coated. Marinate for at least 10 minutes.
  4. Slice the zucchini into half-moons, drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
  5. Arrange the marinated chicken thighs on a baking sheet, surrounded by seasoned zucchini slices.
  6. Drizzle the remaining marinade over both the chicken and zucchini.
  7. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and zucchini is tender.
  8. Garnish with freshly chopped parsley before serving.
