  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt Adjust to taste.
  • 2 tablespoons Green Onions Can be swapped with chives.
  • 1/4 cup Basil (Chopped) Fresh.
For the Topping
  • 1 cup Vegan Breadcrumbs Optional grain-free: use ground nuts.
  • 2 tablespoons Vegan Butter (Melted)

Method
 

Step-by-Step Instructions
  1. Prepare cashews by soaking in boiling water for 1 hour, then drain and rinse under cold water.
  2. Prep the mushrooms by rinsing and removing the stems, setting aside for the filling.
  3. Preheat the oven to 400°F (200°C).
  4. Make the filling by blending soaked cashews, reserved mushroom stems, lemon juice, coconut cream, white vinegar, crushed garlic, and a pinch of Birds Eye chili until smooth.
  5. Fold in chopped green onions and fresh basil into the filling mixture.
  6. Stuff each mushroom cap generously with the cream cheese filling.
  7. Prepare breadcrumbs by mixing them with melted vegan butter until evenly coated.
  8. Bake the stuffed mushrooms in the preheated oven for 15 to 20 minutes until golden brown.
  9. Serve with fresh ground black pepper and additional basil garnishing as desired.
