Preparation Steps
- Pat the salmon fillets dry with paper towels and season with salt and pepper.
- Heat olive oil and butter in a skillet over medium-high heat and sear salmon for 6-7 minutes.
- Lower the heat, add more butter, garlic, and sun-dried tomatoes. Sauté for 30 seconds.
- Add wine, deglaze the pan, and simmer until reduced by half.
- Stir in heavy cream and Parmesan cheese; simmer for another 3-4 minutes.
- Add spinach to the sauce until wilted, return salmon to the pan, and simmer for 5 minutes.
- Adjust salt and pepper, then serve warm with sauce drizzled over salmon.
