For the Salmon
  • 4 fillets Salmon patted dry
For the Sauce
  • 1 tablespoon Olive Oil for searing
  • 1 tablespoon Butter for sauce
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper freshly cracked
  • 2-3 cloves Garlic minced
  • 1/3 cup Sun-dried Tomatoes chopped, packed in oil
  • 1/3 cup Dry White Wine or chicken stock with lemon juice
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese freshly grated
  • 2 handfuls Fresh Spinach can substitute with kale or arugula

Preparation Steps
  1. Pat the salmon fillets dry with paper towels and season with salt and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat and sear salmon for 6-7 minutes.
  3. Lower the heat, add more butter, garlic, and sun-dried tomatoes. Sauté for 30 seconds.
  4. Add wine, deglaze the pan, and simmer until reduced by half.
  5. Stir in heavy cream and Parmesan cheese; simmer for another 3-4 minutes.
  6. Add spinach to the sauce until wilted, return salmon to the pan, and simmer for 5 minutes.
  7. Adjust salt and pepper, then serve warm with sauce drizzled over salmon.
