Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly coat a 12-cup muffin tin with cooking spray.
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced white onion and sauté for about 3-4 minutes until tender and translucent.
  3. Add the ground beef and season with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Cook until the beef is browned, about 5-7 minutes. Stir in the drained diced tomatoes and simmer until thickened.
  4. Place one wonton wrapper into each muffin tin cup, pressing down gently. Sprinkle some shredded cheddar cheese at the bottom, add a spoonful of the taco mixture, top with another wonton wrapper and more cheese.
  5. Bake for 13-17 minutes, checking around 10 minutes for crispness. They should be golden brown and the cheese melted.
  6. Remove the taco cups from the oven and let cool for a minute. Garnish with sour cream, guacamole, or cilantro, and serve immediately.
