- Preheat your oven to 400°F (200°C) and lightly coat a 12-cup muffin tin with cooking spray.
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced white onion and sauté for about 3-4 minutes until tender and translucent.
- Add the ground beef and season with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Cook until the beef is browned, about 5-7 minutes. Stir in the drained diced tomatoes and simmer until thickened.
- Place one wonton wrapper into each muffin tin cup, pressing down gently. Sprinkle some shredded cheddar cheese at the bottom, add a spoonful of the taco mixture, top with another wonton wrapper and more cheese.
- Bake for 13-17 minutes, checking around 10 minutes for crispness. They should be golden brown and the cheese melted.
- Remove the taco cups from the oven and let cool for a minute. Garnish with sour cream, guacamole, or cilantro, and serve immediately.
