  • 2 cups Bell Peppers any color works well
  • 1 medium Red Onion mild sharpness and sweetness when roasted
  • 2 cups Broccoli Florets green beans can be substituted
  • 1 medium Zucchini summer squash can be a delightful replacement
  • 1 lb Baby Potatoes halved for even cooking
For the Seasoning
  • 3 tbsp Olive Oil avocado oil can be used as a substitute
  • 1 tsp Garlic Powder or use 2-3 cloves of fresh garlic
  • 1 tsp Onion Powder or freshly minced onion for extra punch
  • 1 tsp Paprika adds smokiness and vibrant color
  • 1 tsp Salt use sea salt for best results
  • 1/2 tsp Pepper use freshly cracked black for best results
For Garnish
  • 2 tbsp Fresh Parsley optional but recommended

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop the bell peppers, red onion, broccoli florets, zucchini, and baby potatoes into bite-sized pieces.
  3. Slice the Italian sausage into bite-sized pieces and mix with the vegetables in a large mixing bowl.
  4. Drizzle olive oil and sprinkle garlic powder, onion powder, paprika, salt, and pepper over the mixture. Toss to coat.
  5. Spread the mixture in a single layer on a large rimmed sheet pan.
  6. Bake for 30–35 minutes, stirring halfway through for even cooking.
  7. Sprinkle fresh parsley on top before serving warm.
