Method
 

Step-by-Step Instructions
  1. Remove the stems from the portobello mushrooms, whisk together soy sauce, paprika, maple syrup, brown sugar, tomato paste, liquid smoke, and oregano, and brush over the mushrooms. Marinate for at least 15 minutes.
  2. Heat frying pan over medium heat, add olive oil, and sauté chopped onions until golden brown for about 10 minutes. Stir in soy sauce and maple syrup, then caramelize for an additional 5 minutes.
  3. Preheat grill pan over medium-high heat, brush with grapeseed oil, and grill portobello mushrooms for about 3 minutes per side, brushing with leftover marinade.
  4. Assemble burgers by placing a grilled portobello cap on a hamburger roll and topping with lettuce, tomatoes, dill pickles, caramelized onions, and avocado slices.
