- Preheat your oven to 190°C (fan) or 210°C (non-fan) and line a baking tray with parchment paper.
- Remove the casings from the pork sausages and mix the sausage meat with apple sauce, dried apples, dried thyme, and sea salt until combined.
- Unroll the puff pastry and halve it lengthwise into two strips.
- Divide the sausage filling into two portions and place each along the center of each pastry strip.
- Brush one edge of each pastry strip with beaten egg, roll tightly around the filling, and seal the edge.
- Cut the rolls into desired sizes and place them on the prepared baking tray.
- Brush the tops of the rolls with beaten egg, sprinkle sesame seeds and thyme on top.
- Bake for approximately 20 minutes until golden brown and crispy.
