For the Sauce
  • 1/2 cup Pomegranate Molasses Substitute with honey and lemon juice if unavailable
  • 2 tablespoons Lemon Juice
  • 2 cups Stock (Chicken or Beef) High-quality stock is best
For Garnishing
  • 1/4 cup Fresh Parsley Chopped
  • 1/4 cup Fresh Mint Chopped
For Serving
  • 4 servings Steamed Rice or Flatbread Persian saffron rice is a great addition

Method
 

Step-by-Step Instructions for Persian Shish Andaz
  1. Marinate the meat with spices including turmeric, cinnamon, cumin, coriander, salt, and black pepper for at least 30 minutes.
  2. In a skillet, heat vegetable oil over medium heat. Sauté onions until golden-brown, about 10 minutes.
  3. Stir in minced garlic and cook for an additional 2 minutes until fragrant.
  4. Sear the marinated lamb or beef in the skillet for 5-7 minutes until browned on all sides.
  5. Pour in pomegranate molasses and lemon juice, simmer for 2 minutes, stirring well.
  6. Add stock, cover, and simmer on low for 1 to 1.5 hours until meat is tender.
  7. Stir in fresh parsley and mint before serving.
  8. Serve hot with steamed rice or flatbread, garnished with additional parsley and mint.
