  • 2 cloves Garlic minced
For the Fish
  • 4 pieces Cod Loins thawed if using frozen
For Garnish
  • 2 stalks Spring Onion can be omitted

Step-by-Step Instructions
  1. In a small mixing bowl, whisk together miso paste, brown sugar, rice vinegar, sesame oil, and minced garlic.
  2. Take the cod loins and pat them dry, then coat with the marinade and refrigerate for at least 1 hour.
  3. Heat 3 tablespoons of vegetable oil in a non-stick frying pan over medium heat.
  4. Add the cod to the pan, cook for 3 to 4 minutes until golden, and cover with lid to cook evenly.
  5. Gently flip the cod and increase heat for a final minute, spooning remaining marinade over it.
  6. Check for doneness, ensuring it reaches an internal temperature of 145°F (63°C).
  7. Transfer the cod to a plate, garnish with spring onions, and serve.
