Cooking Steps
- In a large mixing bowl, combine finely diced onion, freshly minced garlic, and freshly chopped baby spinach with ground chicken. Use your hands or a spatula to mix until well blended, about 2 minutes.
- Incorporate the breadcrumbs, Greek yogurt, chopped fresh dill, fresh lemon juice, and spices into the chicken mixture. Stir until fully combined, about 2 minutes.
- Wet your hands lightly and form the mixture into about 12 uniform patties, about 1 inch thick.
- Heat a skillet over medium-high heat and add a drizzle of olive oil. Wait until the oil shimmers, about 2-3 minutes.
- Carefully place the patties in the hot skillet, cooking for 5-7 minutes on each side until golden-brown and reaching an internal temperature of 165°F.
- For air frying, preheat your air fryer to 375°F, lightly spray the basket with cooking oil, and cook the patties in a single layer for 13-15 minutes.
- Transfer the cooked patties to a plate and let them rest for a few minutes before serving.

Notes
Avoid overmixing to keep the patties juicy. Shape patties of equal size for even cooking. Store uncooked patties in the freezer for up to 2 months.
