  • 2 tbsp Honey or low-carb sweetener
  • 1/2 cup Peanut Butter preferably natural
  • 1/4 cup Rice Vinegar can substitute with apple cider vinegar
  • 1 tbsp Ginger fresh preferred
  • 4 cloves Garlic or garlic powder
  • 1 tsp Cumin omit if unavailable
  • 1 tsp Coriander optional
  • 1/2 tsp Red Pepper Flakes optional for spice
  • 2 tbsp Sesame Oil can use olive oil
  • 2 tbsp Lime Juice lemon juice is acceptable
Chicken
  • 1.5 lbs Chicken Thighs boneless preferred
Garnishing
  • 1/4 cup Cilantro optional
  • 2 tbsp Sesame Seeds optional

Method
 

Marinade Preparation
  1. In a large mixing bowl, whisk together soy sauce, honey, peanut butter, rice vinegar, ginger, garlic, cumin, coriander, red pepper flakes, sesame oil, and lime juice until smooth.
Marinate Chicken
  1. Place chicken thighs in a resealable bag or bowl. Pour marinade over, seal, and refrigerate for at least 2 hours.
Cooking Preparation
  1. Preheat grill to medium-high or oven to 400°F. Oil grill grates if grilling or line baking sheet with parchment if roasting.
Cooking Chicken
  1. Grill chicken for 6-8 minutes on each side until charred and internal temperature reaches 165°F. Roast for 35-40 minutes, basting halfway through.
Serving
  1. Let chicken rest before garnishing with cilantro and sesame seeds. Serve hot with rice or grilled vegetables.
