Step-by-Step Instructions for Savory Cream of Mushroom Chicken
  1. Preheat your oven to 200°C (or 180°C for fan-forced) and prepare your ingredients.
  2. In a shallow bowl, mix together flour, paprika, salt, and pepper. Coat the chicken thighs evenly.
  3. Heat olive oil in a large frying pan and sear the chicken for about 8 minutes until golden.
  4. Transfer the seared chicken to a roasting pan, cover with foil, and roast for 30–35 minutes.
  5. In the same pan, add more olive oil, bacon, and onion, cooking until translucent and bacon is golden.
  6. Add mushrooms and garlic to the pan, cooking for another 8 minutes.
  7. Stir in soup, heavy cream, stock powder, and mustard, simmering until the sauce thickens.
  8. Mix in half of the Parmesan cheese until melted, adjusting seasoning as needed.
  9. After roasting, transfer chicken back to the frying pan and coat with sauce, simmer for 7–8 minutes.
  10. Plate the chicken, garnish with remaining Parmesan and chives, and serve with broccolini.
