Ingredients
  

For the Kofta
  • 1 lb Ground Chicken Use dark meat for richer flavor.
  • 1 medium Onion Can substitute with shallots for a milder taste.
  • 2 cloves Garlic Minced; adjust to taste.
  • 1/4 cup Fresh Cilantro Can replace with parsley.
  • 1/4 cup Fresh Mint Optional.
  • 1 large Egg Use a flax egg for a vegan option.
  • 1/2 cup Breadcrumbs Panko is preferred for crunch.
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Smoked Paprika Regular paprika can be substituted.
  • 1/4 tsp Cayenne Pepper Optional for heat.
  • Salt Salt To taste.
  • Pepper Black Pepper To taste.
For the Creamy Garlic Yogurt Sauce
  • 1 cup Greek Yogurt Low-fat or full-fat as preferred.
  • 1 Tbsp Fresh Dill Tarragon can substitute.
  • 1 Tbsp Lemon Juice Vinegar can be an alternative.
  • 1 Tbsp Olive Oil Any mild oil can work.

Method
 

Preparation
  1. In a large mixing bowl, combine ground chicken, finely chopped onion, minced garlic, chopped cilantro, and mint. Add the egg, breadcrumbs, ground cumin, ground coriander, smoked paprika, cayenne, salt, and pepper. Mix gently with your hands until just combined.
  2. To ensure flavor, cook a small patty in a skillet over medium heat for 3-4 minutes. Taste the patty and adjust seasoning if necessary.
  3. Shape the chicken mixture into elongated pieces, about 1.5 to 2 inches. Arrange on a baking sheet lined with parchment paper.
  4. Cover the formed kofta with plastic wrap and refrigerate for at least 30 minutes.
  5. Heat a skillet over medium-high heat, add olive oil, and cook the chilled kofta for 6-8 minutes until golden brown and internal temperature reaches 165°F.
  6. In a separate bowl, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, and dill. Season to taste.
  7. Place the cooked kofta on a platter, drizzle with the yogurt sauce, and garnish with fresh herbs. Serve with warm pita or rice.
