Method

Prepare Sausage Gravy
  1. In a medium skillet, cook breakfast sausage over medium-high heat for 5-7 minutes until browned and no pink remains.
  2. Do not drain the fat, as it adds flavor.
  3. Stir in all-purpose flour and cook for 2-3 minutes, allowing the flour to absorb the fat.
  4. Gradually whisk in whole milk, then reduce heat to medium-low and simmer until thickened, about 4-5 minutes.
  5. Set this rich sausage gravy aside.
Prepare Scrambled Eggs
  1. In a separate skillet, scramble eggs to your desired doneness over medium heat for about 3-5 minutes.
  2. Stir occasionally until the eggs are fluffy and fully cooked.
  3. Partially melt shredded cheddar or Jack cheese into the eggs at the end if desired.
  4. Set the scrambled eggs aside while you prepare the pastry dough.
Make the Pastry Dough
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together all-purpose flour and salt until well combined.
  3. Cut in the cold shortening and butter using a pastry cutter until the mixture resembles coarse crumbs.
  4. In another bowl, whisk the egg, vinegar, and cold water, then gradually combine with the flour mixture, stirring until a dough forms.
Roll Out Dough
  1. On a lightly floured surface, divide the pastry dough into two halves.
  2. Roll out one half to a thickness of about 1/8 inch, ensuring the dough is even.
  3. Cut the rolled dough into rectangular shapes of 3x4 inches for two halves of each Savory Breakfast Pop-Tart.
  4. Repeat with the second half of the dough.
Assemble Pop-Tarts
  1. Place half of the rectangles on a lined baking sheet.
  2. Brush the edges of these rectangles with egg wash to help seal them.
  3. On each rectangle, spoon a portion of the scrambled eggs and a generous dollop of the sausage gravy.
  4. Top each filled rectangle with the remaining dough pieces and press to seal.
  5. Crimp the edges gently with a fork to ensure the filling stays inside.
Top and Bake
  1. Brush the tops of the assembled Savory Breakfast Pop-Tarts with more egg wash.
  2. Optionally, sprinkle cheese and seasonings of choice on top.
  3. Bake in the preheated oven for about 25 minutes, or until golden brown.
Cool and Serve
  1. Once baked, remove the Savory Breakfast Pop-Tarts from the oven and let them cool on the baking sheet for about 5 minutes.
  2. For the best taste, serve warm and enjoy!
