Ingredients

For the Pastry Base
  • 1 cup All-purpose flour Prevents sticking during dough prep; do not substitute for optimal texture.
  • 1 sheet Puff pastry The key to a light, flaky texture; opt for high-quality brands for best results.
  • 1 spray Cooking spray Ensures easy release from the muffin tin; any non-stick spray works well.
For the Filling
  • 2 tablespoons Fig/Apricot/Peach jam Adds a sweet, fruity layer to balance the saltiness of the feta; feel free to experiment with other jams.
  • 1 medium Sliced shallots Introduces mild onion flavor; green onions can be a great alternative.
  • 1 cup Roasted red peppers Contributes delightful smokiness and vibrant color; fresh peppers can be roasted as a substitute.
  • 8 oz Feta cheese The star ingredient for a creamy, tangy filling; crumbled feta mixes easily.
  • 1 tablespoon Fresh thyme leaves Offers aromatic flavor enhancements; other fresh herbs like oregano or basil could be used as well.
For Seasoning
  • 1 teaspoon Kosher salt Elevates the overall flavor; adjust to your taste, especially if using brined feta.
  • 1 teaspoon Freshly ground black pepper Adds a hint of spice; use white pepper if you prefer a milder flavor.
  • 1 zest Zest of 1 lemon Brightens the dish with citrus notes; lime zest makes a good substitute.
  • 1 teaspoon Chili oil Adds a touch of heat; omit for a milder version or replace with a different oil.
