Step-by-Step Instructions for Bacon Fried Rice
- Cook bacon in a large skillet or wok over medium heat for about 5-7 minutes until crispy. Remove with a slotted spoon, leaving 1-2 tablespoons of bacon fat.
- Sauté diced onions and carrots in the bacon fat for 3-4 minutes until softened.
- Add cold, day-old rice, breaking apart clumps and stir for 2-3 minutes.
- Push the rice to one side, scramble the eggs in the empty space for 2-3 minutes, then mix into rice.
- Combine cooked bacon, drizzle soy sauce and sesame oil, stir for 2 minutes.
- Taste and adjust seasoning before serving, garnish with sesame seeds or sriracha.
