- In a bowl, whisk together turmeric, saffron, lemon juice, olive oil, garlic, salt, pepper, and chili flakes. Let sit for 5 minutes.
- Coat chicken thighs with the marinade and marinate for at least 30 minutes, preferably 2 hours or overnight.
- Preheat the grill to medium-high heat, around 400°F. Prepare a grill basket for onions if grilling them.
- Place marinated chicken thighs skin-side down on the grill and cook for 6-7 minutes. Flip and grill another 6-7 minutes or until cooked through.
- During the last few minutes, add sliced onions to the grill basket and grill until softened.
- Remove chicken and onions from the grill, let chicken rest for a couple of minutes before serving.
