  • 2 teaspoons turmeric
  • 1 pinch saffron or use paprika as an alternative
  • 3 tablespoons lemon juice preferably fresh
  • 4 tablespoons olive oil can substitute with melted butter
  • 3 cloves garlic minced or garlic powder
  • 1 medium onion yellow preferred
  • 1 teaspoon chili flakes adjust based on heat preference
  • 1 teaspoon salt kosher or sea salt
  • 1 teaspoon black pepper freshly ground preferred
For the Grilled Onions (optional)
  • 1 medium onion sliced for grilling

Method
 

Step-by-Step Instructions
  1. In a bowl, whisk together turmeric, saffron, lemon juice, olive oil, garlic, salt, pepper, and chili flakes. Let sit for 5 minutes.
  2. Coat chicken thighs with the marinade and marinate for at least 30 minutes, preferably 2 hours or overnight.
  3. Preheat the grill to medium-high heat, around 400°F. Prepare a grill basket for onions if grilling them.
  4. Place marinated chicken thighs skin-side down on the grill and cook for 6-7 minutes. Flip and grill another 6-7 minutes or until cooked through.
  5. During the last few minutes, add sliced onions to the grill basket and grill until softened.
  6. Remove chicken and onions from the grill, let chicken rest for a couple of minutes before serving.
